For whatever reason, the Falcon's big blue engine was on while they were in hyperspace. Maybe he was just keeping it running so he wouldn't have to start it cold when he drops back into normal space?

Sounds about right, considering how cranky the Falcon's systems tended to be (at least until he hooked up with the Rebels who could reasonably be expected to provide tech assistance to make sure it wouldn't break down at a critical moment). He would likely keep doing it from habit developed during his smuggling days.

OTOH ISTR Imperial ships' sublight engines being at least on high idle when they emerged probably for battle readiness, so it may well be general procedure for both sides.
