Undoubtedly. However, the "local butcher" is not a common
sight in the US, at least, in any part of it where I've
lived. We have supermarkets. The butchers are way in the
back where you can't get at them, and all the meat you see
has already been trimmed, wrapped up, and priced, and put
into huge refrigerated showcases.
We used to have a local butcher. He was great. That was
about twenty years ago.
I guess that's one of the costs of living on the coast.
When I lived in the western suburbs of Minneapolis, every grocery
store in the area had a full-service meat counter. Lund's,
especially, took great pride in theirs.
In western Michigan, it was more rare, but Meijer certainly had one.
Here in Iowa, the superstores (targer and Wal-Mart) tend not to, but
Dahl's, Hy-Vee, and Fareway certainly do. It's probably why Fareway
has done so well in such a highly competitive market -- their meat
counter takes up about half the wall in the back of the store, and is
staffed by at least a half-dozen meat cutters. And surrounded by a
dozen or more customers...
