I can think of the Stainless Steel Rat series (of which I only liked
the first), "Against a Dark Background" by Iain M. Banks, and
"Neuromancer" (mostly about hackers, but they do steal a physical
object early on).

Spies and secret agents interest me in general, although I
specifically want to be told of science fiction novels and short
stories that are about thieves.
It isn't one of the latter, but next time you're in a spysome mood, you
might like to take a look at _Declare_ by Tim Powers; it's one of his
best and like a cross between the finest of Le Carre and Ye Seriously
Scary Supernaturae.
Will try to think of some light-fingered skiffy now...
