I can think of the Stainless Steel Rat series (of which I only liked the first), "Against a Dark Background" by Iain M. Banks, and "Neuromancer" (mostly about hackers, but they do steal a physical object early on).

Spies and secret agents interest me in general, although I specifically want to be told of science fiction novels and short stories that are about thieves.
