court, or catching a celebrity behaving badly that you can sell to a

Exactly. Recording your major items in your house for insurance,
or taking photos on impulse on location.

That's something the iPhone can do, though.

Harder to edit video than photos.

I fail to see your point. When I take or have two pictures from
slightly different angles, it's not impossible to fake them so they
match, but it's expensive work.

Even a single photograph is actually hard to fake. Especially those of
small devices which produce a lot of noise, where you have to create
the same kind of noise in your edits.
