My church organist was instantly hooked on the entire series by
"Passing Through Gethsemane". Theatre people are likely to respond
strongly to "Sic Transit Vir" (Damien London's joking in the teaser is
so wonderfully like Polonius), and "Intersections in Real Time" (which
people started begging JMS to publish as a play from its first airing).
I'd never seen any of B5 until I think somewhere mid-third-season. After that I only caught sporadic bits of it until midway into the fourth season... only to hit a brick wall when no stations around here carried the fifth season until years later. But those snippets that I saw were enough to get me interested. I think the first time I saw Space re-running the entire thing, I'd missed the first few eps of the series, but what I did see got me hooked completely.
It's true, it will be different for everyone, and as John notes, sometimes all it takes is a single episode.
In answer to the original question, try searching for the numerous existing threads on "essential" episodes, and pick a couple from there to address each of your friends' individual tastes. If a few brief samplings don't pique their interest, then cramming 25 eps down their throats won't work any better.
