The way time is perceived would be radically altered.  The
speed of perception depends on runtime allocation.  How much
runtime would the average upload demand?  Would you rather
live in "realtime", which is the most expensive option, or would
you rather give up a century of runtime and instantly skip
forward to a hundred years of new technology and entertainment
media?  Think of the cultural ramifications of which segments
of the population would voraciously consume runtime vs which
segments would leisurely wait in hibernation.

And my aphorism for behavior is, "Extreme experiences create
extreme deviancy."  The stranger your experiences, the further from
human norm your behavior and personality deviates.  Eventually you
jump completely off the standard human behavior track onto something
new.  Someone who has the experiences you outline above will not
think or act like a human being.

I think this depends on the particular person's personality.
Some particular personalities may remain the same at
the core.

In the story I'm working on, much of upload culture has
indeed jumped completely off onto "something new".
However, a large and important segment of the culture
is culturally ossified. Most of the "human" infested
neck of the galaxy is under the benevolent* dictatorship
of myriad copies of just one particular upload. The only
beings trusted to govern are copies of the original.
This segment of the population is stuck with a 21st
century core mentality.

*"Benevolent" is a debateable matter of opinion. Suffice
it to say that her subjects could have done a lot worse.
