Pretty much any wind instrument without delicate mechanisms; a recorder or ocarina should be in perfect shape. I don't know too much about the mechanisms of a flute or trombone, but I imagine they're pretty robust.
I play sax and viola.
Flutes and saxes have pads that seal over the tone-holes,
and the pads will have decayed after this amount of time,
making the instrument unplayable. I think the same is
probably true of any wind instrument with tone holes and
keys.
I've never played a brass instrument, but I think the valves
need periodic maintenance and lubrication.
Re bowed strings, I think the bow hairs are susceptible to
insect damage or other types of decay. I don't know what
kind of condition the rosin would be in after that long.
I don't know what style of music you have in mind, but
if it's jazz, a bass might still be playable, pizzicato.
