Cite? People have been eating animals which died from wounds
inflicted with lead bullets for centuries, generally without a
problem.
Can you point to incidents of mass lead poisoning from hunted
meat? I don't think so.

Its true that there is a move to non-lead shot (tungsten and bismuth
are used as well as steel), but that's due to lead poisoning in birds
caused by them *eating* the pellets off of the ground or lake bottoms,
not due to survived hits. Birds have gizzards comtaining stones, which
grind the pellets to powder, greatly increasing the absorption of the
metal.

Humans don't have gizzards, so eaten pellets pass through the system
with little impact.

If a human is wounded with a lead pellet or bullet, if it's intact,
in
muscle, and not a focus of infection, its generally left in place. It
gets encapsulated, and people live many decades without a problem.
If the bullet is fragmented, and the fragments work their way into
the
blood stream or other organs, they can cause lead poisoning,
sometimes many years after the injury.

The target, when hunting turkey, is its head, so pellets are somewhat
less likely to strike the edible portions. Damaging the meat is not
desirable, quite aside from lead concerns. Part of preparation is to
get out any pellets which can be found.

The biggest risk lead shot presents to the diner of wild turkey is
a broken tooth, not lead poisoning.
