Weakly fermented drinks flavored with ginger aren't particularly
difficult to make. The one I know best is "weak honey drink" from
_The Closet of Sir Kenelm Digby Opened_, a 17th century source, but
I've also experimented a little with a 19th century recipe for ginger
beer, using sugar rather than honey.

I have never done this, because I don't like the stuff, but friends of
mine did while students. You could tell they'd been doing so by the
splash marks and stains on the ceilings of their rooms: the proper
fermentation agent, "ginger beer plant" develops remarkable amounts of
CO2, and tends to explode closed containers.

Two liter plastic diet coke bottles are recommended for the final
fermentation. The earlier stage is done in a container that isn't sealed.

I don't know what you mean by "ginger beer plant." The fermentation is
done by yeast consuming honey (Digby recipe) or sugar. The ginger is
there for flavoring.
