Are there any octopus-like creatures in the real world that can function
out of water? I've assumed that the design depends on buoyancy to work.

Actually, a lot of octopi function quite nicely out of water. Scientists
studying them tell of walking down the hall seeing an octopus walking toward
them. Octopi often do the tidal pool thing, moving from one to another
searching for tasty crustaceans, etc..
