Note that I have the same reaction to "weigh out the flour" that you do to "cups". WTF am I supposed to do, go to the bathroom (the only location of the house that MIGHT have a set of scales) and hope it's accurate enough for making food?

They are about as common here as American measuring cups are in Europe. If that.
Um, I live in the States. Many of my recipes are European, ancient,
derived from Grandma and such - and require weight for ingredients
rather than cups. I found a kitchen scale in a random kitchen store,
no problem - this one is even co-graduated in ounces and grammes,
which is even better for me. But I had no problem whatsoever finding
one.
I didn't say they were hard to find. I'm sure that a good cooking store in Europe would have American measuring cups, too.
I said they were not common, and they are not. Our family does quite a bit of cooking, and we don't have scales, and as far as I know only one family of my immediate acquaintance DOES -- and I'm not sure I've ever seen them use the things.
