For Mac users, the new WAVE Editor software seems to be the ultimate
application for those interested in really getting into their .wav
files. It is expensive software so probably not for the masses, but very
capable and functional software with a very complete feature set.

I asked the developers:
Can Wave Editor read and write BWF mono and poly files?
And got this reply:
BWF files are actually just WAV files with some extra metadata, so yes.
You can't edit the BWF metadata however, but as long as 'Retain
Unrecognized Data' is checked in the preferences, the metadata will
continue to be in the file throughout processing. Editing the BWF
metadata is something we're planning with the next version.
