well, there are some stereo systems that use dummy heads, or spherical
thingy, and put mics (omni, infra cardio, or cardio) like ears on each
sides. There is the ORTF thing (cardio mics, 110 degrees, 17 cm apart),
that I use a lot (I'm french born, maybe that helps...) There is also
the Jaecklin way, when you put a circular separation between two omni
mics.
In fact, there are many ways to achieve stereo recording. Some are,
though, more easy and practical than other. And your case, the simpler
the better.
As I used to make a lot of ambient recordings, often discretly, and as
I like to experiment things a bit, I figured out one day to try a
couple of lavalier on each side of a bag roughly 20 cm apart, recorder
in the bag. It worked better than I thought. Sonically, the bag acts as
the dummy head, (so the sound waves coming from a side have a longer
way to reach the opposite side). Also, it is particularly discreet and
easy to work with : everything in a bag, no visible mike, no wires,
etc...
No necessity to be fussy about the bag : along the years I have try
different model, shoulder bags, backpacks... as long as there is
something between the mics (a scarf, anything...), it works fine.

Disclaimer : there is NO garantee of mono compatibility with such a
set-up. You must pay attention to that in post-prod. And I would NOT do
critical music recordings with that.

But it's a really easy way to record beautiful atmos. And I bet these
atmos will be pretty useful when mixing your doco, even if they are not
in sync with the visual. No trouble at all.

One more things to think about, more on the "philosophical" side :
you'll travel with a camera. Very often you'll shoot "visual atmos"
with no need to pick up good dialog (another problem entirely). In
these cases, it's better to have stereo sound (in my opinion, YMMV). On
your camera is probably a stereo mike, which is crap, sure, but is
documenting better the scenes.
It document also very well the camera noise, zoom motor, fingers,
etc... but sometimes it's ok (when the ambient level is high), although
sometimes not (quiet places). Anyhow, the mono shotgun you'll put on
the camera will pick up well the camera noises also, except if you move
it away with a short boom (like 15/20 cm)
Talking people is another thing. I don't know of anybody able to shoot
with a camera and booming at the same time. Maybe somebody on this
planet do it, but I never saw that. So, if you're alone,your best bet
is the lavalier, except if the talking person is VERY close. And I do
mean veerryy close. So, let's say you're shooting somewhere, and
suddenly somebody wants to talk to you : that's fine, but no time to
stop everything and put a lavalier, right ? Go close up. More. Closer.
If not, the result is no usable sound. Simple as that.
