Other than in the case of small incidental trinkets (pins, lanyards, Dream FP's, etc.), I am certain that winners of any large prizes are required to sign waivers of rights, permission to use names, likenesses, and other information. This is pretty much SOP with any contests with prizes worth enough to require tax implications (and even some that aren't).

There has been some discussion about the selection process for prize winners and as I recall, someone was accusing Disney of only picking guests with the "Disney Look" for the Castle Suite stay. I believe that at least one CM chimed in and explained that the winners were selected by a system that pretty much guaranteed a lack of input by the CM. For example, the winner might be the first person of the morning to buy an autograph book at the cart in front of the train station, or something like that.
