As for my family, we prefer Disney's version of Paris because it represents
the best of Paris.
For example, while taking a boat ride down the real Seine river we saw a
couple "doing the tango" on a park bench.

Question for disney fans ... why do you visit this artificial
environment multiple times?
For the same reason some people prefer dramas to documentaries. It's
just personal preference. Some people want to *experience* reality in
their vacations, others want to *escape* reality in their vacations -
and Disney is the ultimate in escapism.
In other words, Disney fans don't view Disney's France pavillion as a
substandard "fake" version of Paris (the realist view); on the
contrary, they actually *prefer* Disney because it's an *idealized*
version of Paris. I guess it all comes down to whether you are an
idealist or realist.
