That's because the figures I tossed out ARE the per hour average.
Server jobs tend to be 20-30 hours per week NOT 40.

Do you know why they feel slighted? Because those who don't think
they should be making that kind of money are usually the most
demanding customers who bitch and moan about their service no matter
how good it is.

I have used the tip as a weapon against exactly ONE bad server in the
last couple of years. Last month, a bartender at the Fort Lauderdale
airport Chilli's was so absolutely, horrid that we left a dime for the
tip.

That's what I think is funny. My income is based on making sure
people get good service from my staff. I am OVERLY critical of the
hospitality industry, finding little flaws almost everywhere I go.
Somehow I just don't encounter the terrible service at the rate some
would seem to claim they find it. (Example, our culprit, Ed making
the claim that he's never had exceptional service on his first visit
to any restaurant.)

Then again, I don't take the attitude that the server is my personal
indentured servant.

Remember, everyone, I watch this stuff every day. Most of the people
who complain of bad service never find good service because they make
damn sure it's impossible to meet their standards.

Then they defend themselves by making it sound as if those not
complaining are, somehow, defective in that they put up with such
attrocities without complaint.
