The Age of Apocalypse didn't actually happen. It's a separate timeline.

Only characters that experienced both timelines retain memories of it.
Bishop jumped timelines due to his not being a native of the mainstream
timeline. The crossover characters (X-Man, Dark Beast, Sugar Man,
Holocaust, and Blink of Exiles) have/had memories of the Age of
Apocalypse, as well.

Everyone else (though I'm sure there are quite a few characters like
Bishop running around the mainstream timeline) didn't experience both
timelines.
