Start with RFC 2045, RFC 2183, RFC 3282, RFC 5322 and RFC 5536; RFC
5322 may refer to RFC 5321 for some of the syntax, but probably not at
the level you're concerned with. Start with 6. IANA Considerations in
RFC 5536.
i could tell what was custom or not.
Any header field whose name begins with X- is nonstandard, but some
are defacto standards, e.g., X-No-Archive.
