Used cooking oil is traded on the same exchanges that trade oil and other
commodities. The price of used cooking oil has risen dramatically since
trading and speculation started years ago. This means that any used
cooking oil has an inherent value set by exchange traders. Taking the
cooking oil from a restaurant without paying for it is a crime just like
any other theft.

I'm told there are commercial products made from used cooking oil, including
pet food
