Seems like a lot of micromanagement involved. I just make sure he gets

Seriously, stop torturing yourself and your family. Eating a balanced diet doesn't mean you have to micromanage every single bite. It means not eating junk all day every day. It means eating fruit and vegetables and grains and dairy and possibly meat.
I don't think our grandparents or even our parents were thinking about what best to serve with what to get enough iron/calcium/whatever into the baby, and we all live and I don't know a single person with problems because of a malnutrition/deficiency of some sort. Third world countries have that problem, but they have that problem because there is not enough to eat.
I haven't bought a "fortified" food for my children, ever. I don't believe in that stuff. I like buying organic and I like cooking real food, from scratch. I try to not buy sweets (haha, yeah.. emphasis on _try_) and we eat a good amount of fruit and vegetables. We don't have any deficiencies, not even Sam who eats like a very weird little bird.
