When kids start puberty, their greatest growth is from outside in: feet and hands, then lower legs and forearms, then upper legs and and upper arms, finally trunks. A lot of kids about this age also feel really awkward because they have relatively big hands and feet.

He will eat a ton for a few days, then slows way down. Back and
forth. His weight is fine and he is healthy.

I think the puberty ages for boys and girls makes charting height and
weight differences near impossible.

Yeah, but you can tell when puberty is hitting. Early in puberty there is growth of hair where there hasn't been much hair before, and also, in males, testes start to increase is size before this (I suspect ovaries do as well, but this is much harder to test).

One problem with early puberty is that by the end of puberty, the body is nearly done growing (a kid might grow one to three inches after high school). If puberty occurs prematurely for a kid, his or her height may be permanently affected. If there is an issue with this, docs can take x-rays of hand bones to examine how the bones are growing (stages of bone growth is well characterized in the hands and visible in x-rays). (This might happen if a child shows signs up puberty say at the age of six.)

In both cases mentioned here, the growth seems like it might be perfectly fine for the kid.

The other thing is that growth and puberty tends to be early in some families and later in others. So if dad and mom and had (late or early) puberty, the child will likely have (late or early) puberty as well.
