If you flipped a coin every second from the time the earth was formed
(geological, not biblical age), it might have happened about 56 times.
There are more ways to make up, say, 25 heads and 24 tails, so the
probability of that happening is much higher.

He meant "25 heads total, and 24 tails total", not "25 heads in
sequence followed by 24 tails in sequence". For instance, the
sequence H T T H H gives 3 heads, 2 tails; so does the sequence
T H H H T.
