Your results are typical for type 2 diabetics. There's some combination
of hormones/genetics/whatever that causes the effect. Many find the
solution is to eat low carb at breakfast (eggs, fish, cheese, etc) and
eat carbs later in the day.
I've found the same thing. Carbs for breakfast spike me. I can almost eat a
wheatfield for dinner. The funny thing is I've been eating an eggbeater
omelette almost every morning for breakfast lately with whatever leftover we
happen to have around. One day last week, that meant a Tilapia omelette.
Thoroughly grossed my wife out. Hehe.
