You people are funny! Fruitpie is a nickname my
husband gave me and it just sort of stuck.
I don't really care for pie myself but I do
know how to bake and can make anything without using sugar.
Splenda? I found baking a great way to gain weight.
These days I on a low carb diet on a permanent basis
so other than the occassional baked veggie or roast,
the oven is unused.
I would think I would be more worried about the fat
that goes into the pie crust!
Actually, sugar and fast carb result in raise synthesis
of trigylcerides and add to the risk CVD.
Further, there is a "school of thought"
that holds natural saturated fats are relatively healthy
to very healthy. So if you use unrefined coconut fat instead
of hydrogenated vegetable oil the main danger in the crust
will be the sugar and flour. Hydrogenated soy oil contain
a form of hydrogenated vitamin K that has anti-vitamin
properties.
Understand many so-called saturated fat are in fact
high level sources of archidonic acid an unsaturated fat
involved in the production of inflammatory prostaglandins.
The book "Inflammation Nation" contains a nice
discussion of one the more moderate points
if viewpoints in the spectrum ideas.
And if you go over to the sci.med.nutrition you find
folks that echo the ideas of Ray Peat who claims
essential fatty acids are not essential.
Personally I believe people eat too much in the way of omega-6 fatty
acids
especially the refined ones, too little omega 3 oils,
I suspect the ratio between the two class of fatty acids is important
and
the monounsaturated and saturate fats and oils
tend be fairly benign to even healthy in the context of
a low carb diet.
Since increasing my fat intake and dropping my
carb intake I've lost 11 kilograms.
If you do this the low carb vegetables are
really important. Fruit is limited to small serving
sizeseand preferably berries such as blueberries or currants
are used.
