This is very interesting but....

Human digestion does not work this way.

Human saliva is always alkaline, perhaps as alkaline as pH of 8.
That is of course, unless you are unhealthy and mineral deficient.

Prior to eating food, the alkaline pH will have neutralized any acid
in the stomach.

Next, when you eat your food, the saliva must be alkaline in order for
the salivary amylase ptyalin to be active and begin to digest any
carbs in the food that is in the mouth. This digestion continues in
the ALKALINE stomach, of healthy humans.

Following carb digestion, the stomach will go acidic. This stops any
further carb digestion, and allows for the stomach to secrete
pepsinogen which the secreted HCL will then convert into pepsin, and
protein digestion will begin at a ph of 2 or so.
This is the correct methodology and chemistry of digestion in the
healthy human.

Who knows what happens in the unhealthy human with all their pills,
acid producers, and acid blockers.

It is no wonder that modern humans are so undernurished, poorly
nurished, sick, and weak. The modern human has no clue about
digestion, digestive chemistry, or enzyme activity.
