Monounsaturated fat...



The last year or so I've been on a "good fat" trip, trying to
replace saturated fat in butter with olive oil and now flax
and fish oil.

But I still consume plenty of saturated fat. What I can't
find out is how much of the good monounsaturated fat it takes
to negate the bad effects of the saturated fat. If saturated
fat raises the bad cholesterol and monounsaturated fat raises
the good cholesterol that clears away the bad, there should
be a certain ratio where the benefit cancels the negative.

So if I consume 10g of saturated fat, how much olive oil would
I need to consume to counteract the artery-clogging?
