I have tried doing that, and if you mix in onions and a little mustard it is
pretty good, but I cannot eat more than one sandwich of that stuff.
Even when it tastes good, canned salmon really gives me the feeling that I
am eating that specialty cat/dog food that comes in the little cans and has
a photo of the pampered dog/cat on it. Canned salmon has the consistency of
pet food.
Sockeye is far better canned than any of the other salmons. I can my own, usually 50+ pints per year, no added salt or anything else, bones & all (well, I slice the fins off too).
It's great, but I never have tried the commercial product to compare. I usually mix a pint with a few tablespoons of miracle whip and some chopped onions, black pepper and once in awhile some garlic. Nothing makes a better sandwich. Go a little heavier on the miracle whip or light mayo and it's also a great dip or spread for crackers etc..
