Sometimes businesses don't want to be paid! I saw a battle between two
businesses once. One business owed the other a large amount of money for
services and this was toward the end of the year. The business owed the
money did *not* want to be paid until the next year so they would have less
income for the year and pay less in taxes. The business which owed the money
wanted to pay the money owed so they could write it off their taxes. So the
two businesses went back and forth on this. "FAX us a statement" said the
one business. "Not until after the first" said the other business. Back and
forth they went...

It would have been easier to allow themselves to be paid by mail, but
simply hold on to the check until the first, then deposit it. The
payee can claim they didn't receive the income until it was deposited.
Some credit card companies hold onto checks as well, but for more
insiduous reasons.
