I have to write some chemical reactions for my report, A goes to B,
and this reaction is catalyzed by Z. So I am writing
A $\rightarrow$ B, but how can I show a Z over the right arrow,

Rather than try to re-invent the wheel, take a look at the mhchem
package. It provides a very nice interface to a whole range of
formatting.
