You're perfectly right about not having included a minimal code
example, and thank you for having tried yourself.
As far as I can see (from the memoir source code) this is actually a design
feature. But there is an undocumented workaround. There is a stared version of
\subcaptionref that doesn't use that font setting. In my opinion, this should
have been mentioned in the manual.
Indeed "Figures~\ref{fig:cool-this} and~\subcaptionref{fig:cool-that}"
didn't look quite right, but the starred version is ok. Maybe the
author just forgot mentioning it in the manual, however it's quite an
impressive work (both wrt the class itself and the docs) and it's
natural one may overlook some detail... memoir has been definitely
*excellent* for writing my thesis, I'm really satisfied!
