PDFNet toolkit is available as a .NET/JAVA/C/C++ on Windows, Mac,
Linux.
The nice thing is that embedded images will be extracted in their
native color space, resolution etc (or the closest possible
approximation).

That looks pretty fantastic, but expensive ... I'm hesitant to play
with it because I might find it addictive and have to pay for it! :-)
