You are correct in that I have no intention of building an MMC or Compact
Flash card as I have several laying around here some place. Also as strange
as this may sound I have not even thought about my ZX81 in 15 - 20 years. I
really hated my cassette setup as it was slow but mostly reliable. So
please pardon my dumb questions until I get up to speed. Is there an FAQ
about how all of this is done? I have questions like: Is it possible or
practical to transfer all of my cassette based s/w to MMC? Which one of
these kits (both the converter and the interface) is the best?

MMC or MultiMediaCards, and Compact Flash cards are "solid-state",
or chip-based, storage media ad thus have no moving parts. They are
most popular in digital cameras. Building one from scratch would be
daunting task, to say the least. More likely, you'll be wanting to
build a
Compact-Flash-to-IDE converter, and then a GIDE interface. Google
is your friend.
To sum up:
You don't really want to build an MMC/Compact Flash Card
Learn to love Google (or Ask Jeeves. Or Yahoo.)
