All you need is a 2.5mm-to-3.5mm stereo adapter (2.5mm male, 3.5mm
female). But as the Treo 650's headset jack can be fragile, I don't
recommend using a straight adapter (too much leverage pulling on the
jack). There are several adapters that work better: there is an "L"
shaped adapter as well as a wired adapter (very short wire). These
adapters are readily available on Ebay or at Treo-centric Websites
(i.e., Treocentral.com). Or even from Palm.
As audio is also available via the multi-connecter, at least one company
is developing a headphone adapter that doesn't need the headset jack at
all:

Finally, you can buy a stereo headset that works for music, as well as
with the phone (a "hybrid" adapter). These contain a mic, and don't need
an adapter at all. Palm sells one of these themselves:

See above--you can use any 3.5mm headphones you want. You are
more-limited in selecting hybrid headsets (stereo/phone/mic) that do
contain the 2.5mm plug standard.

The Treo 650 does not support the profile needed for stereo Bluetooth
headphones. There were rumors that it could be added, or added via a
hack. But I am unaware if anyone has actually accomplished this.
A normal Bluetooth headset is generally good for only phone calls (if
that, in some cases). However, there is at least one software app that
lets you re-route other sounds to a standard Bluetooth headset. But the
bitrate of a Bluetooth headset is rather low, using it for music is IMO
a rather poor experience--and of course it won't be in stereo.

I have both a 2.5mm-to-3.5mm adapter--so I can use any headphones I
like--as well as the hybrid headset (so I can listen to music, and use
the phone at the same time--the music stops when a call comes in). I
also have a Bluetooth headset as well as a wired (mono) phone headset
(the one included with the Treo).
I find the quality quite acceptable when listening to music. But I do
recommend getting VolumeCare, which can help increase the Treo's output
volume. I also recommend Pocket Tunes (Deluxe) which is IMO a lot better
than the included RealPlayer. With PocketTunes Deluxe, you can listen to
Internet radio and Shoutcast streams--literally hundreds of choices.
While Sprint's Vision (CDMA 1x) isn't fast enough to support
high-fidelity streams, I have found the quality very acceptable (and
with unlimited Vision, it doesn't cost anything extra--besides the price
of Pocket Tunes Deluxe).
