Several reasons.

That would be one reason. Maybe I don't want to send an email to ????

This would be another reason: if I send an email to myself, through my
own SMTP server, I can tell if it worked immediately. (I happen to like
seeing the actual message arrive at my chosen destination--immediately.)

This *would* be the third reason, but I'm smart enough to realize the
difference between de-spamming a Usenet email address Vs. de-spamming an
SMTP reply-to address. Since many SMTP servers will refuse to send a
message if the reply-to address is invalid, I suspect you would be
getting a lot more than just 1/4 test messages with incorrect reply-to
addresses if all servers let everything through.
The above might be an indication that a noticeable percentage of users
are confused over how SMTP works within the app (i.e., who de-spams
their own email address--for normal email--besides spammers
themselves?).
Regardless, it still won't help with servers that require a POP login
before SMTP access is allowed, nor with (SSL) ESMTP authentication.
If I were you I'd yank out the SMTP client and hook to the user's email
application of choice. Unless things are dramatically changed in 4.0, or
I have run into atypical users, the SMTP part of the app can be
confusing. Some of these people are already capable of sending email via
their everyday email app (on the Palm).
IMHO, YMMV, etc.
