OK, here's the real deal. Many people have found that iChat does not
work very well with video. Practically everyone who has tried Skype has
found that Skype works well with video.
My experience is the following:
Skype video works almost every time. And it works between
Windows and Mac almost every time. I'm much more likely to
get a Windows user to Skype video chat with us than to use
Windows AIM.
iChat's video is a little flaky inasmuch as the connections
fail much more often (even mac-to-mac) than do Skype chats.
But when iChat does work, the quality of the picture is
generally noticeably better.
So if it's mac-to-mac, I'll usually try to iChat first.
