tried turning Internet Sharing on and off, selecting a specific channel,
turning encryption on and off, etc., but no luck. The Mac Pro is able to
access the internet via an old Charcoal Airport, so I know that the
Airport card is working.
I'd be really greatful for any suggestions, as uploads are slower and
less reliable if I connect via the base station as opposed to via
ethernet direct to the router.

Seems that a channel change was the cause of the problem. Setting the
channel to channel 1 allows the iPhone to see the MacPro and share its
internet connection. Channel 11 - no go.
