I'm curious how Jamie is measuring his system's resources usaage.
One convenient method, yet just as accurate as the command line tools,
because it can be clearly observed while a hang occurs, is a utility named
MenuMeters. Among other things, it can display memory paging as it occurs.

Here are some configuration suggestions -
CPU - An update interval of 1 sec works for me. The graph and percentage
display mode makes observing loading quite easy.
Disk - I use the Disk Arrows (large) option, with an update interval of
0.3 second.
Memory - Displaying the Used/Free Totals works for me. The important
thing here is to check the Show paging activity box, so you can observe
swapping. I have this updating every 3 seconds, you may want to do it
faster.
Network - This problem is probably not net-related. Displaying the
Graph and Throughput with an Update interval of 1 second makes this a
decent way to measure speed, though. Better than any speed test site,
because you're always seeing real results from your own actual use.
Note that clicking on the various its various menu items will display
cumulative stats, including the swap file data mentioned above, when you
click on the memory part of the display.
What are the top few apps listed when you use "top -o cpu" in a terminal?
This is also a good suggestion, especially if a large spike in CPU usage
is seen ala the above.
