AppleScript. But it's only viable if you've already got the names you
want stored someplace that you can associate with the file. (Like the
filenames themselves, but read further.)

What you're running into is that once the names are embedded in the
files (in the ID3 tags) iTunes prefers them over the file names. It
will, in fact, prefer to rename the files to match the embedded track
name.
