There are several ways to do this.
In no particular order:
SilverKeeper
SuperDuper!
Retrospect
Backup
If the files are music files or something else iTunes knows, iTunes.
Newer versions of Toast can do this. I don't know about v6.
Going to VersionTracker and doing a search on 'backup cd' will be helpful.
