even if you find an app it will not be able to decrypt encypted traffic for you.

and this is exactly why most IMs offer encryption these days. so people with access to the network, but no access to someone elses IM account, can't spy on others.
you could try blocking IM traffic on the network layer if you are the one who is responsible for this network and you have a problem with people using IM. but you don't spy on them.
