OK, I'll bite.
A "Service" on Mac OS X is a function or facility provided to the user
by an application, which is accessed via the "Services" menu under the
application menu.
Any such service is available as soon as the application which provides
it is installed on the computer - the application which provides the
service doesn't need to be running at the time you want to use the
service.
In general, services are accessible from most Mac OS X applications, in
particular all those which are written based on the Cocoa framework.
Some services will only be usable in the right context, for example if
you have some text selected.
Applications written based on the Carbon framework (including most
ported from Mac OS 9 and earlier) might not support some or most
services: the developer may have to do some extra work to enable support
for services.
Some specific examples that come with Mac OS X:
- The "Grab" application provides services which let you grab a
selection, the entire screen, or a time delay snapshot (saving you from
having to know the magic key combinations for these operations, or
having to run the Grab application to do them).
- Mail has services which let you send the current selection as an
e-mail message, or the current file selected in Finder as an attachment.
- Spotlight has a service which finds the current selection.
Services can have keyboard shortcuts, which will be available globally
(as long as the application you are currently using supports services).
These can sometimes conflict with the application's own keyboard
shortcuts.
