It's fairly straightforward.

They will install a box where the fiber enters your home. Coming out of
that box is your voice, data and video (depending on what services
you've paid for.)

Your existing voice phone lines will be attached to the box.

Coaxial cable carrying television service will come out of that box,
attaching to your existing cable TV cables.

The data line will either piggyback on the coax, or can leave the box as
Ethernet. It's my understanding that the installers will use whichever
method is most convenient. You may be able to request one or the other
from the installer.

If they run Ethernet to the room with your router, you can choose to
either use their or your own. It's a simple IP-over-ethernet
configuration. If they run the data over coax, you'll need their
router. You can, of course, attach your own router to one of the
Ethernet ports on that router if you like.

What concerns me is that one rep told me they install a wireless
router, which I don't want. I want to continue using the AE setup that
I have. All I want from them is an ethernet cable, like I am using now
with DSL. Another rep told me that it would be installed however I
wish.

You will get the router whether it is attached or not.

The WiFi part can be disabled. I recommend you do so, because (assuming
you get the same model I've worked with) it doesn't support WPA2
encryption and doesn't allow you to disable Wi-Fi-based administration.

If they run Ethernet from the FiOS tranceiver to your computer room,
then you should be able to simply attach it to your AE base station and
not use the Verizon router at all.

If they run the data over coax, you'll need their router. In your
situation, I'd turn off the Wi-Fi and use it as a simple Ethernet
router. Then attach your AE base station and use it for Wi-Fi. Set the
AE into "bridging" mode. This will allow the Verizon router to act as
the DHCP server for your LAN. (Running NAT on a LAN that is already
NAT'ed may cause connectivity problems with some applications.)

I'd appreciate hearing from anyone in a similar position who has had
FIOS installed as to how they did it and how flexible the configuation
is.

I haven't set this up in my home, but I have spoken with a few Verizon
reps (including an installer.) Additionally, several friends of mine
are using it (but using the Verizon-supplied router) and my iBook has
absolutely no problem connecting through it (but with only WPA
encryption, not the WPA2 that I recommend everybody use.)
