You could try slipstreaming SP2 to your SP1. I don't know if you can
create bootable CDs from within Parallels but you may be able to using
CDBurnerXP Pro (http://www.cdburnerxp.se/)
If I recall correctly the RyanVM's and nLite will create .iso files
that your machine may be able to burn.
