I used Final Vinyl (free, from Griffin) for the simplicity. It's awkward, but the learning curve of the other apps I looked at was too steep for a one-time project.
Audacity is definitely a geek tool, but Amadeus was
easy to learn (and didn't crash as often).
Final Vinyl was adequate to trim off the stuff at either end, but in cases where I wanted to concatenate two cassette sides into one MP3 I imported the audio into iMovie and did everything there.
Both Audacity and Amadeus can do that. Though for one project
(a HUGE number of files that had to be converted from stereo
to mono) I used a shell script to call 'sox'
