These don't have FireWire built in, so 10.3 for them.
and a b&w PowerMac 400.
This one does, so 10.4 works. You'll want more than 512MB memory; 768MB

These systems have
relatively small HDs (6 gig, 10 gig, 10 gig), and so I'm thinking of
trying to wipe the HDs clean and install OS X only. Obviously, that
would maximize HD space. But is going with OS X only a foolish thing to
do?
No. Remember to upgrade their firmware, as appropriate, before you make
the change. You can't do it from OS X on these machines.
Most of what will be done on these systems is word processing, e-mail,
and web browsing; I was just looking for more stability than OS 9 has
given.
Should work fine. More ambitious work becomes less rewarding, unless you
start upgrading graphics/mass storage, and at that point, you can
probably get a new Mini for around the same cost.
