I need Intel iMac Info

It's the beginning of the year and I need to replace three computers in
my office. I'll buy two PCs and a new fully loaded 20" 2GIG Ram 600
Meg hard drive Intel iMac but I need some assurance and bona-fide
solutions to the following needs and requirements.

First, all of our current machines rely on OS/2 but we know our time is
waning on the OS/2 platform. I'm looking ahead and cannot stomach the
idea of moving to Microsoft. Apple's OS X seems appropriate and
possible yet I know zilch about the OS. I am here today because I want
the power and beauty of an Intel iMac sitting in my reception area and
seek the advice and guidance of those who love their Apple operating
systems and machines.

First up - MP3 support:

We use an OS/2 computer to pipe MP3 music files through the office
sound system all day long. I don't own an IPod and hear about ITunes
and I know the Intel iMac comes with an ITune application. I need
assurance that the ITune player will play MP3 files. If not, (why
not?) and is there a third party conversion program that would bridge
those MP3s over to an Apple approved format? Or is there a third party
Apple program that will allow us to utilize our 40GIG MP3 music
library?

Second - Web site management:

I am responsible for maintaining 22 different web sites. Four of which
I must manage personally with updates, etc., on a daily, weekly and
monthly basis. I see iLife has iWeb but that's not going to work for
me because it is tied specifically to web sites associated with Apple's
web site service. I'll need an ftp solution that will allow me to
access our web sites (all with separate domain names/sites) to perform
files management. Is there a direct or third party solution to access
these web site directories under an OS X operating system on an iMac?

Third VHS conversion to DVD:

We hold and use a library of approximately 1,000 VHS training and
medical oriented videos. I need to convert those VHS videos over to
DVD. We've looked at a number of transfer solutions but my desire is
to feed those videos into a computer, edit them, add titles and
chapters then burn to DVD. Is this possible under an OS X system on
the iMac either directly or through third party offerings?

Fourth Java:

It is crucial that any new machine within our office have Java
capability to access Java applications and other online services that
use Java and Java applications. The medical world is full of Java
items/features/programs. Will the OS X iMac offer this important
compatibility? Toss in here Flash ability too. We'll need to be able
to make Flash offerings as well as view them. What's the status on the
lates releases of Java and Flash?

These are the four main deal breakers. If the OS X iMac fails to
provide a workable solution then I've got to do some serious thinking.

I've got $3,600 allocated within the budget for an Apple expenditure if
it is possible. Help me out here with your best knoweldgeable advice.
I don't want "it is possible" solutions, I want to know that each of
these requirements is do-able. I would love to see a beautiful white
iMac sitting out there in the entry office for clients to see the
moment they walk in the door.

Thanks for your time and assistance.
