How many users are going to connect to this? If you have more than 10
users and all/most of them connect at the same time, keep in mind you
may want to go with OS X Server if you can.

If this this for a small deployment (which it sounds it is), the
Sharepoints tool may do what you need. Somewhere you could do it
manualy, but it may be a bit of work to do so (Apple makes is harder to
setup custom sharepoints on Mac OS X client).

A third way to do this since you are a "Unix guy" is to use the open
source netatalk software that allows you to serve Mac clients with AFP
on a Unix box.

Yet another thing to keep in mind is that OS X can mount smb/windows
shares. You can even intergrate a 10.3 or greater client computer with
Active Directory if you need to. Just because it is a Mac doesn't mean
it can't intergrate with other platforms. OS X can play with Windows
servers.
