Also, the full version of Acrobat is extremely useful for some
applications. It can OCR the text in a document, overlay that invisibly
on the original image of the document, and save the whole thing in a
PDF. This gives you a PDF that preserves original formating perfectly
(since it has the image), but that you can find with Spotlight (since it
has machine-readable text). You can even select and copy text with
either Acrobat or Preview, and you'll end up with the editable text on
the clipboard.
