For pop, fetchmail/procmail is definitely the way to go. There is pop
support in mutt itself if you build it that way, but even mutt's own
documentation recommends using fetchmail. The real strength of mutt is
in dealing with mailbox files, either the files written by fetchmail +
procmail or files accessible via imap (mutt has first-rate imap
support).
If for some reason you really prefer to use mutt's own pop support, set
the pop_host variable in .muttrc to pop:username@server or, for ssl,
pops:username@server. For pops you probably also want to set
pop_authenticators to 'user'. I don't know offhand whether or not
mutt's built-in pop support can handle multiple pop servers. But as Mr
Fenison points out, fetchmail handles this very nicely.
If you want your local mail files to be readable by both mutt and
Mail.app, this is easily accomplished by running a local imap server.
Ask if you want know more about this option.
For outgoing mail, mutt uses sendmail, which in osx means postfix,
as mentioned above. Depending on your network configuration, you might
need to modify /etc/postfix/main.cf and /etc/postfix/transport. If you
have trouble with outgoing mail, ask here.
